- 1 egg plus 3 egg whites or all egg whites or egg beaters
- Sliver of avocado
- Any veggies
- 1 tbs low fat shredded cheese or veggies slices
- ¼ cup black beans.
- Put liquid egg whites in a bowl, add salsa, sliver of avocado, any veggies. Options to add 1 tbs low fat shredded cheese or veggies slices or ¼ cup black beans. Put in microwave for 3-5 minutes depending on strength of your microwave.
- Take out and eat as is or put in Whole Wheat wrap – top with 1 tbs of plain greek yogurt and salsa or just salsa.
